Quick, easy chocolate fudge cookies

Sometimes you want a cookie without all the fuss.

Searching for something quick and easy to bake last weekend, I stumbled upon this recipe for chocolate fudge cookies. They’re made using a box cake mix, of all things (gasp!), but they turned out absolutely delicious — and can be customized in all sorts of ways.

Had I had a bag of those addictive mint chocolate chips on hand, I would have happily tossed them in — but this recipe is pretty great as-is! I just added a little vanilla extract to the batter because vanilla makes everything better; it’s science.

If you want a quick treat using items likely already in your pantry, I present you with . . .

Chocolate Fudge Cookies

Adapted from AllRecipes.com

Ingredients:
• 1 (18.25 ounce) package devil’s food cake mix
• 2 eggs
• 1/2 cup vegetable oil
• 1 cup semi-sweet chocolate chips (or mint, or any other kind)
• 1 tsp vanilla extract

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease or line cookie sheets.
2. In a medium bowl, stir together the cake mix, eggs and oil until well blended. Fold in the chocolate chips. Roll the dough into walnut sized balls. Place the cookies 2 inches apart on the cookie sheet.
3. Bake for 10 to 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Yields approximately 24-30 cookies.

    • Thanks, Livvy! I’m feeling a little hungry from looking at delicious baked goods, too. Doesn’t help that all of these were consumed earlier in the week . . .

      • Ahhhhh. My cousin and me made cake recently, unfortunately I never got to try it since I went home before we got the butter for the icing in the center. Still, I think I shall have to look at using this reciepe myself! 🙂

    • I’m obsessed with my new Union Jack spatula — it’s bad. Really bad. I’m sure you’ll see it making another appearance again soon!

    • Thanks, Mike — happy to have found your blog, too! Looks like you have plenty of fabulous goodies to keep me in the kitchen for months! 🙂

  1. Right as I sit here and eat my 100 Calorie Klondike ice cream sandwich, which I am sure isn’t quite as tasty. My daughter is the baker in the house, and she just made these (from scratch!) double chocolate brownies with mint icing and chocolate glaze. Took her forever. But now they are over there whispering to me to eat them.

  2. I am NOT a chef by any means but these look so good (and they look homemade, which I guess they kind of are!). I can’t wait to try out the recipe since it’s easy!!! Thanks for passing it on!

  3. Love your Brit spatula!!!! How fun. And the cookies look awesome. Recipes that rely on box mixes like this are so handy for a week at the shore (fewer ingredients to buy or pack from home) or for a last-minute treat when you really don’t want to fuss. Mint chocolate chips would have been irresistible.

  4. Such an easy recipe! I’ve got a few bananas to chuck into muffin batter, or else I’d have succumbed to making these 🙂 Love your spatula!

  5. Cake mix cookies are a known favorite in my apartment. I’ll have to share this recipe with my roommate! Beautiful photos, btw.

  6. These look so good! Good job it is Sunday night here as I could be tempted into trying these, despite the fact that I made chocolate cake this weekend and so have definitely surpassed my chocolate quota!

  7. oh my these look so good and so simple to make that is what i like recipes to be very minimal, and get me faster to the finished product so i can eat it!!
